Follow package directions to boil the pasta. Once done, drain and let them cool on parchment paper.

Turn oven to 350°F. Spray a 9x13 pan with nonstick spray and spread a thin layer of marinara over the base.

In a big bowl, combine ricotta, mozzarella, Parmesan, eggs, parsley, salt, and pepper. Stir until it’s smooth.

Use a spoon, pastry bag, or your hands to carefully fill the manicotti shells with the cheese mixture. Make sure to stuff both ends.

Place the stuffed manicotti over the marinara in a single layer. Pour the rest of the marinara over the top.

Cover tightly with foil and bake for 40 minutes. Sprinkle extra mozzarella on top and bake uncovered for 5-10 more minutes to melt the cheese.
