Cheese Stuffed Manicotti (Print Version)

# Ingredients:

→ Pasta

01 - 8 manicotti shells

→ Cheese & Marinara

02 - 24 oz jarred marinara
03 - 15 oz container of ricotta
04 - 2 cups mozzarella, shredded (save a little extra for the top)
05 - 1/2 cup Parmesan, finely grated

→ Seasonings & Mix-Ins

06 - 2 eggs, large
07 - 2 tbsp fresh parsley, minced
08 - 1/2 tsp sea salt
09 - 1/4 tsp ground pepper

# Instructions:

01 - Follow package directions to boil the pasta. Once done, drain and let them cool on parchment paper.
02 - Turn oven to 350°F. Spray a 9x13 pan with nonstick spray and spread a thin layer of marinara over the base.
03 - In a big bowl, combine ricotta, mozzarella, Parmesan, eggs, parsley, salt, and pepper. Stir until it’s smooth.
04 - Use a spoon, pastry bag, or your hands to carefully fill the manicotti shells with the cheese mixture. Make sure to stuff both ends.
05 - Place the stuffed manicotti over the marinara in a single layer. Pour the rest of the marinara over the top.
06 - Cover tightly with foil and bake for 40 minutes. Sprinkle extra mozzarella on top and bake uncovered for 5-10 more minutes to melt the cheese.

# Notes:

01 - Let the dish sit for 5-10 minutes before slicing so the filling firms up.
