Chicken Peppers Mozzarella (Print Version)

# Ingredients:

01 - 4 medium chicken breasts, about 2 pounds.
02 - Pepper and salt, add as needed.
03 - 1/4 cup plain flour.
04 - 2 tablespoons of olive oil (use it in two steps).
05 - 1 tablespoon of butter.
06 - 1/2 cup of roasted red peppers from a jar, sliced thin.
07 - 1 and a half cups of fresh baby spinach leaves.
08 - 3 minced garlic cloves.
09 - 4 slices of mozzarella, freshly sliced.

# Instructions:

01 - Slice each chicken breast across the side but stop before cutting through. Sprinkle on salt, pepper, then coat in flour.
02 - Melt butter with half of the oil in your skillet. Sear each side for 2 to 3 minutes until brown. Move it to a plate.
03 - Cook the spinach and slices of peppers in the leftover oil for 3-5 minutes. Add the garlic for another minute. Adjust flavors with salt if needed.
04 - Stuff the chicken with mozzarella and the spinach-pepper combo. Keep fillings secure using toothpicks. Bake at 375°F for 20 to 25 minutes or until the inside reaches 165°F.

# Notes:

01 - Don't forget to take out the toothpicks before eating.
02 - Jarred roasted peppers save time.
03 - You'll need a skillet that can go in the oven.
