Velvet Strawberry Cheesecake (Print Version)

# Ingredients:

→ Cake Mixture

01 - 1 tablespoon cocoa powder
02 - 1 cup granulated sugar
03 - 1/2 teaspoon salt
04 - 1 teaspoon white vinegar
05 - 2 tablespoons red food coloring
06 - 2 large eggs, room temperature
07 - 1 teaspoon vanilla extract
08 - 1 teaspoon baking soda
09 - 1 teaspoon baking powder
10 - 1 1/2 cups all-purpose flour
11 - 1 cup buttermilk, room temperature
12 - 1 cup vegetable oil

→ Cream Cheese Layer

13 - 1 cup powdered sugar
14 - 16 oz cream cheese, softened
15 - 1 cup heavy whipping cream
16 - 1 cup fresh strawberries, pureed
17 - 1 teaspoon vanilla extract

→ Decorations

18 - Whipped cream
19 - Fresh strawberries, halved

# Instructions:

01 - Set your oven to 350°F. Grease a 9-inch springform pan and line it with paper.
02 - Mix cocoa powder, flour, sugar, salt, baking soda, and baking powder in a bowl by sifting them together.
03 - In another bowl, whisk eggs, buttermilk, vinegar, oil, vanilla, and food coloring. Stir this mixture into the dry ingredients until just combined.
04 - Pour the prepared batter into the pan and bake for 25 to 30 minutes. Let it cool fully after baking.
05 - Beat cream cheese until fluffy, then slowly add powdered sugar. Mix in vanilla and strawberry puree. Carefully fold in whipped cream at the end.
06 - Spread the cream cheese filling over the cooled cake. Refrigerate for at least 4 hours until firm, then decorate with halved strawberries and whipped cream.
