Shrimp Stir-Fry Noodles (Print Version)

# Ingredients:

01 - 200 g peeled shrimp.
02 - 250 g of Chinese noodles (egg or egg-free).
03 - One onion.
04 - A carrot.
05 - A mix of half a red, green, and yellow bell pepper.
06 - One clove of garlic.
07 - 1 cm of fresh, grated ginger.
08 - 2 tablespoons of olive or sesame oil.
09 - 5 tablespoons of soy sauce.
10 - An optional tablespoon of oyster sauce.
11 - Salt and pepper to your preference.

# Instructions:

01 - Cook your noodles in boiling water for about 5 minutes. Drain them and set them aside.
02 - Add some oil to a hot wok or a large frying pan. Toss in the crushed garlic, grated ginger, and shrimp. Stir-fry for 2 to 3 minutes, then take them out of the wok.
03 - Pour a splash of oil into the same wok. Stir-fry thinly sliced onion, and add the carrot and peppers that you’ve cut into thin strips. Keep stirring until they’re tender but still have a nice crunch.
04 - Throw the shrimp back into the wok. Pour in the soy sauce (and the oyster sauce if you’re using it). Stir it thoroughly. Add the cooked noodles and mix everything so it’s all coated in the sauce.
05 - Let it cook for another 2-3 minutes so everything melds together. Taste it and adjust with a bit of salt, pepper, or even some honey if you want a hint of sweetness.

# Notes:

01 - Serve this dish right away to keep the crispness of the veggies.
02 - Top with fresh cilantro or sesame seeds if you’d like.
