Chop the onion and cook it in the olive oil until it turns clear. Stir in the spinach, cooking it down until all the water evaporates.

Whisk the eggs together with the milk. Mix in the cheese and the nutmeg. Add some salt and pepper too.

Spread the cooked spinach evenly into muffin molds, then pour the egg and cheese mixture on top.

Pop the tray in the oven at 180°C and bake for 20 to 25 minutes, or until the muffins are golden and ready.
