Spinach quiche muffins (Print Version)

# Ingredients:

01 - 150 g of fresh spinach leaves.
02 - 1 tablespoon of olive oil.
03 - 4 eggs.
04 - 100 g of shredded cheese.
05 - 1 onion.
06 - A pinch of nutmeg (optional).
07 - 100 ml of milk or heavy cream.
08 - Salt and pepper to taste.

# Instructions:

01 - Chop the onion and cook it in the olive oil until it turns clear. Stir in the spinach, cooking it down until all the water evaporates.
02 - Whisk the eggs together with the milk. Mix in the cheese and the nutmeg. Add some salt and pepper too.
03 - Spread the cooked spinach evenly into muffin molds, then pour the egg and cheese mixture on top.
04 - Pop the tray in the oven at 180°C and bake for 20 to 25 minutes, or until the muffins are golden and ready.
