Spinach & Feta Cake (Print Version)

# Ingredients:

01 - 3 eggs.
02 - 200 g of fresh spinach.
03 - 1 minced shallot.
04 - 1 peeled and cored garlic clove.
05 - 100 ml of milk.
06 - 2 tablespoons of olive oil.
07 - 200 g of flour.
08 - 100 g of crumbled feta cheese.
09 - 100 ml of cream.
10 - 1 packet of baking powder.
11 - 1 tablespoon of chopped basil.
12 - 3 tablespoons of mixed seeds.
13 - 2 tablespoons of olive or vegetable oil.
14 - Salt and pepper.

# Instructions:

01 - Heat some olive oil in a pan, then cook the spinach with the garlic and shallot until all the liquid evaporates. Set aside.
02 - Combine eggs, milk, cream, oils, flour, baking powder, basil, spinach, and 2 tablespoons of seeds in a large bowl or with a mixer. Gently fold in the crumbled feta. Add a touch of salt, then pepper.
03 - Line a loaf pan and pour the mix in. Sprinkle the rest of the seeds on top. Bake at 200°C for 10 minutes, then slice the cake down the middle. Lower the temperature to 180°C, and bake for 30 more minutes.
