Make sure the wings are completely dry by patting them down with paper towels. This step is key for that crunchy skin. Coat them in a sprinkle of salt, smoked paprika, garlic powder, and black pepper in a big bowl.

You can either bake or fry! To bake: line a baking sheet with foil, place a wire rack on top, and spread the wings out. Cook at 400°F for 40-45 minutes, flipping midway through. To fry: heat oil to 375°F, dropping the wings in batches to fry for 8-10 minutes until golden and crispy. Both methods deliver crispy goodness!

As the wings cook, mix honey, brown sugar, hot sauce, vinegar, soy sauce, and cayenne (if using) together in a pot. Bring it to medium heat, stirring now and then, until the mixture bubbles and thickens a bit, which takes about 3-5 minutes.
