Spicy Peanut Cucumbers (Print Version)

# Ingredients:

β†’ Vegetables

01 - 2 large English cucumbers, sliced into thick circles about 8 mm wide

β†’ Seasonings

02 - 1/2 teaspoon of salt
03 - 2 tablespoons of low-sodium soy sauce
04 - 2 tablespoons of rice vinegar
05 - 1 tablespoon of honey
06 - 1 teaspoon of crushed red pepper flakes
07 - 1/4 teaspoon of ground black pepper

β†’ Extras

08 - 1/2 cup of roasted and chopped peanuts
09 - 2 tablespoons of peanut butter
10 - 2 cloves of garlic, minced finely
11 - 2 tablespoons of fresh parsley, chopped

# Instructions:

01 - Toss the cucumber slices with some salt in a bowl. After that, move the slices to a colander to drain excess water for about an hour before use.
02 - Grab a small bowl and combine soy sauce, rice vinegar, peanut butter, honey, garlic, crushed red pepper flakes, and black pepper. Stir it all together until smooth and fully mixed.
03 - After the cucumbers are drained, place them in a large bowl. Add the dressing, peanuts, and parsley, then toss everything so it’s well-coated. Serve it up right away.
04 - If prepping in advance, cover the dish and refrigerate for up to 8 hours. Before serving, let it warm to room temperature and give it a good mix since the peanut dressing might settle at the bottom.

01 - To enhance the flavor, try toasting the peanuts before chopping them.
