Spicy Creamy Chicken (Print Version)

# Ingredients:

01 - 1/4 cup heavy whipping cream.
02 - 1 1/2 cups chopped celery.
03 - 1 tablespoon garlic, minced.
04 - 1 (14 ounce) can fire-roasted tomatoes, drained.
05 - 1 cup diced onion.
06 - 1 1/2 cups chopped bell peppers.
07 - 1 tablespoon olive oil or melted butter.
08 - 8 ounces softened cream cheese.
09 - 1 cup chopped carrots.
10 - 2 teaspoons your favorite hot sauce.
11 - 2 tablespoons Cajun or Old Bay seasoning.
12 - 3 cups chicken stock.
13 - 1 1/2 pounds boneless chicken breasts.

# Instructions:

01 - Warm up oil in a big pot. Stir in garlic, onions, carrots, bell peppers, and celery. Let it cook a few minutes until softened.
02 - Toss in the chicken, seasonings, tomatoes, and stock. Cover the pot and let it cook on low for about 30 minutes.
03 - Take the chicken out and shred it. While shredding, gently stir cream and softened cream cheese into the pot.
04 - Whisk the soup until the cream cheese blends smoothly. Put the shredded chicken back in the pot.
05 - Ladle into bowls and, if you'd like, sprinkle some green onions, cheddar cheese, or a splash of hot sauce on top.
