Spicy Citrus Salmon (Print Version)

# Ingredients:

01 - Four 4-ounce salmon portions.
02 - Half a cup of fresh orange juice.
03 - 1 packed tablespoon of brown sugar.
04 - 2 teaspoons white sugar.
05 - 1 teaspoon unsweetened cocoa powder.
06 - 1/4 teaspoon of cayenne.
07 - 1/4 teaspoon of cinnamon.
08 - Pinch (1/8 teaspoon) of table salt.
09 - Dash (1/8 teaspoon) of black pepper.
10 - One medium orange, sliced into rounds.
11 - 4 tablespoons of melted butter.

# Instructions:

01 - Get your oven hot at 400°F.
02 - Put some orange juice in a dish, lay salmon skin-side down in it, and leave for 15 minutes.
03 - Stir together white and brown sugars, cocoa powder, then toss in cayenne, salt, pepper, and cinnamon.
04 - Take salmon out, put it skin-side down on a parchment-lined pan. Rub with spice blend, arrange orange slices on top, and brush with melted butter.
05 - Roast for 20-25 minutes, or until it's flaky.
