Spiced Wild Rice with Cashews (Print Version)

# Ingredients:

→ Base

01 - 250g of wild rice
02 - 750ml of salted water

→ Toppings

03 - 240g of cooked chickpeas
04 - 60g of unsalted roasted cashews
05 - 2 white onions
06 - 1 tablespoon of flour
07 - 1 bunch of parsley
08 - 50g of raisins

→ Spices and Seasoning

09 - Curry
10 - Turmeric
11 - Cane sugar
12 - Cinnamon
13 - Cumin
14 - Coriander
15 - Olive oil

# Instructions:

01 - Rinse the rice, then let it simmer in salted water for 40 minutes (or 20 minutes if you’re using a pressure cooker).
02 - Place the raisins in warm water to let them soak.
03 - Coat the onions lightly with flour and fry them in olive oil until golden. Lay them on a paper towel to remove excess oil.
04 - Heat some olive oil in a pan, toss in the spices, and let them cook for about 2 minutes to release their flavors.
05 - Mix the cooked chickpeas and roasted cashews with the spiced mixture in the pan. Stir in the rice, raisins, parsley, and the fried onions. Make sure everything is combined well.

# Notes:

01 - You can swap out chickpeas for lentils if you'd like.
02 - Adding spinach is another option for more greens.
