Spiced Cake Michalak (Print Version)

# Ingredients:

01 - 150 g of water.
02 - Zest from one yellow lemon.
03 - Zest from an orange.
04 - 150 g of honey.
05 - A small pinch of salt.
06 - One zest of two green limes.
07 - 25 g of whole sugar.
08 - 4 g of spice blend for gingerbread.
09 - 6 g of star anise (badiane).
10 - 100 g of butter.
11 - 5 g of baking powder.
12 - 150 g of T55 flour.

# Instructions:

01 - Heat water, honey, sugar, salt, spices, citrus zests, star anise, and butter in a pot until it boils. Cover it up and let it rest for 25 minutes.
02 - Combine the flour with baking powder in a bowl. Strain the spiced mix into the bowl and whisk until smooth.
03 - Pour the batter into a greased and floured loaf pan. Bake at 180°C for 25 minutes.
04 - Let it cool a bit before taking it out of the pan. Wrap it in plastic and let it sit until fully cooled. Optional: brush with light syrup for a glossy look.
