Spiced Roasted Carrots (Print Version)

# Ingredients:

01 - Bunch of baby carrots – 1 bunch
02 - Extra virgin olive oil – 2 tablespoons
03 - Loubia mix with saffron – 1 teaspoon
04 - Balsamic vinegar – 1 tablespoon
05 - Honey – 1 teaspoon
06 - Feta cheese – 50 grams
07 - Sea salt to taste
08 - Parsley for decoration

# Instructions:

01 - Cut off the tops of the carrots, scrub them clean, and slice them in half lengthwise.
02 - Place the carrots in a big baking dish. Coat them using 1 tablespoon of olive oil, sprinkle the saffron loubia mix, and add some sea salt. Bake them at 200°C in a traditional oven for 15 minutes.
03 - Mix together 1 tablespoon of olive oil with balsamic vinegar and honey.
04 - After 15 minutes in the oven, brush the carrots with the honey mixture. Turn the oven to 160°C and roast them for another 15 minutes. Check if they’re tender by poking them with the tip of a knife.
05 - Transfer the carrots onto a serving platter. Crumble some feta cheese on top, then sprinkle chopped parsley for a touch of green.
