Soft molasses cookies (Print Version)

# Ingredients:

→ Dry Mix

01 - 375 g of unbleached all-purpose flour
02 - 1 pinch of ground cloves
03 - 1 pinch of salt
04 - 5 ml of baking soda
05 - 2.5 ml of ground ginger
06 - 2.5 ml of ground cinnamon
07 - 5 ml of baking powder

→ Wet Mix

08 - 160 g of brown sugar
09 - 30 ml of milk
10 - 1 egg
11 - 125 ml of molasses
12 - 115 g of unsalted butter, softened

# Instructions:

01 - Set the rack in the center. Heat it up to 180 °C. Lay parchment paper on two baking sheets.
02 - Stir together the flour, baking soda, baking powder, spices, and salt in one bowl.
03 - In a second bowl, use an electric mixer to cream the butter with the brown sugar and molasses. Toss in the egg and mix until smooth. Slowly add the dry mix while alternating with the milk, keeping the speed low.
04 - Use a 60 ml ice cream scoop to drop 7 dough balls onto each baking sheet. Keep them about 6.5 cm apart.
05 - Bake one sheet at a time for around 18 minutes. Let them cool completely on a rack before eating.
