Smothered Chicken Dinner (Print Version)

# Ingredients:

01 - 1 teaspoon smoked paprika.
02 - 2 teaspoons minced garlic.
03 - 1 cup whole milk.
04 - 2 cups chicken broth.
05 - 1 medium onion, chopped.
06 - 1 1/2 cups plain flour.
07 - 1 teaspoon poultry seasoning.
08 - 1 tablespoon garlic powder.
09 - 1 tablespoon onion powder.
10 - 1 teaspoon celery seed.
11 - 1 teaspoon ground black pepper.
12 - 1 teaspoon salt.
13 - 1/4 cup cooking oil.
14 - 1 pound chicken thighs or legs.

# Instructions:

01 - Rinse the chicken well and set aside.
02 - In a big bowl, combine flour and all the seasonings. Save a little for thickening gravy later.
03 - Thoroughly coat each piece of chicken with your seasoned flour blend.
04 - In a hot pan, cook the chicken in oil until it’s golden brown. Set aside.
05 - Sauté the chopped onion in the pan for about 2 minutes. Stir in the garlic and cook for another minute. Remove them and set aside.
06 - Stir the leftover flour into the drippings in your pan. Slowly whisk in the milk and chicken broth to make a smooth sauce.
07 - Add the chicken, onion, and garlic to the gravy. Cover the pan and let it simmer for 30-35 minutes, flipping the chicken occasionally.

# Notes:

01 - Don’t crowd chicken when frying in the pan.
02 - Keep some of the seasoned flour for making the creamy sauce.
03 - Flip the chicken while it’s simmering to cook evenly.
