Turkey Leftover Soup (Print Version)

# Ingredients:

01 - 1 tbsp butter.
02 - 1 tbsp olive oil.
03 - 2 celery stalks.
04 - 1 garlic clove.
05 - 1 large carrot.
06 - 1 onion or 2 shallots.
07 - 6 cups chicken or turkey broth.
08 - 1/2 cup couscous (pearl type).
09 - 1/2 tsp dried thyme or 4 fresh sprigs.
10 - 2 cups cooked chicken or turkey.
11 - 2 bay leaves.
12 - Salt and pepper as needed.
13 - 1 tbsp chopped fresh parsley.

# Instructions:

01 - Melt butter with olive oil in a big pot.
02 - Dice up the carrot, celery, onion, and garlic.
03 - Cook the veggies for 5 minutes with thyme on low heat.
04 - Pour in the broth.
05 - Add the cooked turkey or chicken along with the bay leaves.
06 - Let everything come to a rolling boil.
07 - Sprinkle in salt and pepper to your liking.
08 - Stir in the pearl couscous and let it cook.
09 - Simmer for 10 minutes until the couscous softens.
10 - Scatter fresh parsley over the top.
11 - Enjoy it while it's steaming hot.

01 - Homemade or store-bought broth works fine.
02 - Swap couscous with noodles if you prefer.
03 - Perfect for leftover turkey or rotisserie chicken.
