01 - 1 package puff pastry, thawed
02 - 1 lb sausage
03 - 2 cups milk
04 - 1 teaspoon salt
05 - 1/4 cup all-purpose flour
06 - 1/2 teaspoon crushed red pepper flakes (optional)
07 - 1/2 teaspoon black pepper
08 - 1/2 teaspoon ground sage

# Instructions:

01 - In a big skillet over medium heat, cook the sausage until it's nicely browned. Break it apart as it cooks. Once it's ready, sprinkle the flour over it, mix well, and let it cook for 2 minutes.
02 - Slowly add the milk, stirring the whole time. Turn up the heat to medium-high so it boils. Turn it back down to a simmer, stir occasionally, and wait about 5 minutes for it to thicken. Stir in salt, pepper, sage, and red pepper flakes (if you like extra spice).
03 - Set the oven to 375°F (190°C). Roll one sheet of puff pastry out and use it to line the bottom of a 9-inch pie dish. Let a bit hang over the edges.
04 - Spoon the sausage gravy into the dish and spread it out evenly. Roll out the second puff pastry sheet and lay it on top. Trim the extra dough, pinch the edges to seal it up, and cut little slits in the top to release steam.
05 - Put the pie in the oven on the middle rack and bake it for 25-30 minutes, or until the top is golden and flaky. Let it cool a bit before slicing it. Serve it while warm!
