Spread a thick layer of herb and garlic cheese on all slices of the bread.

Put the smoked salmon on top of 4 slices. Place the remaining slices on top, cheese side down, and sprinkle shredded cheese on the outside.

In a medium-heat pan with melted butter, toast each side of the sandwich for about 3-4 minutes until golden brown and the cheese is gooey.

Serve them warm with fresh dill on top if you'd like, and maybe a side of greens.
