Rocky Road Chocolate Cookies (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 1 teaspoon vanilla extract
02 - 2 large eggs
03 - 1/2 cup sugar
04 - 1 cup brown sugar
05 - 1 cup cold butter, cubed

→ Dry Ingredients

06 - 1/2 teaspoon salt
07 - 3/4 teaspoon baking soda
08 - 1 teaspoon cornstarch
09 - 1 1/2 cups all-purpose flour
10 - 1 cup cake flour
11 - 1/2 cup unsweetened cocoa powder

→ Mix-ins

12 - 3/4 cup cashews, roughly chopped
13 - 2 cups mini marshmallows
14 - 1 3/4 cups semi-sweet chocolate chips

# Instructions:

01 - Set your oven to 410°F. Beat together butter with both sugars for 4 minutes until fluffy and pale.
02 - Drop in the eggs one at a time, followed up by the vanilla. Keep the mixer running for about a minute.
03 - Slowly blend in the dry stuff, then gently stir in the chips, marshmallows, and cashews.
04 - Shape into 5-6 oz dough balls. If you want, press extra chocolate chips or marshmallows on the top.
05 - Pop them in the oven for 9-11 minutes. Gently push any melty marshmallows back toward the cookie middle. Let them cool down for 15 minutes.

01 - Cake flour can be swapped with all-purpose flour.
02 - Pick a light baking sheet for the best outcome.
