Take your cottage cheese and blend it until it's completely creamy. You can use a blender or a food processor for this.

Put the smooth cottage cheese in a medium bowl. Save 1 cup of the chocolate chips for topping later. Stir in the rest of the ingredients until it's all combined.

Let the dough firm up by sticking it in the fridge for half an hour.

Cover a baking sheet with parchment paper. Scoop small portions of dough using a cookie scoop, roll them into balls, and put them on the tray. Freeze the balls for about 20 minutes or longer.

Melt the chocolate chips you set aside earlier in a microwave (stirring every 15 seconds). Dip the cold dough balls into the melted chocolate, pop them back on the parchment paper, and chill until the chocolate is firm.
