Protein Cookie Bites (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 cup of 2% cottage cheese
02 - 2 tbsp of sugar-free maple syrup (try brands like Lakanto)
03 - A teaspoon of pure vanilla extract
04 - 1 1/2 cups almond flour, or all-purpose flour that's heat-treated

→ Protein & Topping

05 - 1/4 cup of vanilla protein powder or another flavor of your choice
06 - 1 1/2 cups of sugar-free dark chocolate chips, like Lily's (split amount)
07 - 1 tsp of coconut oil

# Instructions:

01 - Take your cottage cheese and blend it until it's completely creamy. You can use a blender or a food processor for this.
02 - Put the smooth cottage cheese in a medium bowl. Save 1 cup of the chocolate chips for topping later. Stir in the rest of the ingredients until it's all combined.
03 - Let the dough firm up by sticking it in the fridge for half an hour.
04 - Cover a baking sheet with parchment paper. Scoop small portions of dough using a cookie scoop, roll them into balls, and put them on the tray. Freeze the balls for about 20 minutes or longer.
05 - Melt the chocolate chips you set aside earlier in a microwave (stirring every 15 seconds). Dip the cold dough balls into the melted chocolate, pop them back on the parchment paper, and chill until the chocolate is firm.

01 - If you pick all-purpose flour, be sure to heat-treat it to make it safe.
02 - Switch up the flavors by using a different protein powder.
03 - For the best texture and safety, store in the fridge.
