Smoked Salmon Pancakes (Print Version)

# Ingredients:

→ For the toppings

01 - 1 pack of artisanal smoked salmon from Dan Fumoir
02 - 1 tablespoon of fresh dill
03 - 1/2 cup of cream cheese
04 - 1 tablespoon of lemon juice

→ For the rösti

05 - 2 eggs
06 - 2 cups of peeled and shredded potatoes
07 - 1/2 red onion
08 - 1 tablespoon of olive oil

# Instructions:

01 - Mix the cream cheese, dill, and lemon juice in a bowl. Set this aside for now.
02 - Whisk the eggs in a bowl. Fold in the shredded potatoes and onion, then shape the mixture into eight patties.
03 - Heat the oil in a non-stick pan over medium heat. Cook each patty for 5-7 minutes per side until they’re golden and tender.
04 - Top each rösti with the dill cream cheese mixture and a few slices of the smoked salmon.

# Notes:

01 - Serve while it’s hot for the crispiest texture.
02 - Make sure to thoroughly drain the shredded potatoes to keep the rösti crunchy.
