Turn your oven on and set it to 180-190°C. Sprinkle both sides of the pork generously with salt, black pepper, and paprika. Place it on a baking dish or sheet, ready for later.
02 -
Pour some oil into a pan and warm it over medium heat. Toss in the chopped onions and cook until soft. Add the carrot slices, stir, and cook for a couple more minutes. Throw in the mushrooms next and keep stirring. Once they're tender, season lightly with salt and pepper.
03 -
Spread your cooked veggies over the pork in the baking dish. Pop it into the oven and bake for about 40 minutes at 180-190°C.
04 -
Boil the diced potatoes in salted water until soft—this takes roughly 15-20 minutes. Drain the water off, then mash them well with butter and warm milk until smooth. Mix in the cheese until it’s thoroughly melted and creamy. Sprinkle with parsley before serving.
05 -
Once the pork has baked for 40 minutes, check if it's cooked through. If it is, layer the mashed potatoes either on top or alongside. Turn the oven up to 220°C and bake for another 15-20 minutes, or until the mashed potatoes are golden with a slightly crispy top.
