Pork with Vegetables (Print Version)

# Ingredients:

→ Pork

01 - 1 to 1.2 kg pork (shoulder or loin works great)
02 - Dash of salt
03 - Dash of black pepper
04 - Sprinkle of paprika

→ Vegetable Layer

05 - 2 medium onions, chopped small
06 - One large carrot, sliced into rounds
07 - 200 grams of fresh mushrooms, thinly sliced
08 - Cooking oil to fry
09 - Pinch of salt
10 - Pinch of ground black pepper

→ Mashed Potatoes

11 - Six peeled and diced potatoes
12 - Water for boiling
13 - Salt to season
14 - 200 grams of Suluguni cheese (or any cheese you prefer)
15 - A bit of butter
16 - A splash of warm milk
17 - Chopped parsley for extra freshness

# Instructions:

01 - Turn your oven on and set it to 180-190°C. Sprinkle both sides of the pork generously with salt, black pepper, and paprika. Place it on a baking dish or sheet, ready for later.
02 - Pour some oil into a pan and warm it over medium heat. Toss in the chopped onions and cook until soft. Add the carrot slices, stir, and cook for a couple more minutes. Throw in the mushrooms next and keep stirring. Once they're tender, season lightly with salt and pepper.
03 - Spread your cooked veggies over the pork in the baking dish. Pop it into the oven and bake for about 40 minutes at 180-190°C.
04 - Boil the diced potatoes in salted water until soft—this takes roughly 15-20 minutes. Drain the water off, then mash them well with butter and warm milk until smooth. Mix in the cheese until it’s thoroughly melted and creamy. Sprinkle with parsley before serving.
05 - Once the pork has baked for 40 minutes, check if it's cooked through. If it is, layer the mashed potatoes either on top or alongside. Turn the oven up to 220°C and bake for another 15-20 minutes, or until the mashed potatoes are golden with a slightly crispy top.

# Notes:

01 - Season the pork well so it’s full of flavor.
02 - Use a thermometer to see if the pork’s done—it should hit 70°C inside.
03 - For a twist, mix in chopped garlic or herbs with the mashed potatoes.
04 - Crank up the broiler for some extra crisping on the potato layer.
