Keep the turkey in the fridge for 3-7 days to thaw completely.

Heat oven to 325°F. Take out giblets, pat turkey dry, and fold its wings under its body.

Fill the inside of the bird with lemon, onion, apple, rosemary sprigs, garlic, and thyme.

Combine butter with oregano, thyme, rosemary, sage, pepper, and salt until smooth.

Spread herbed butter under the skin and all over the outside of the turkey. Tie the legs to secure.

Set turkey, breast side facing up, into a roasting pan. Push thermometer into the thick breast area.

Bake for 15 minutes per pound, waiting until the internal temp reaches 165°F.

After removing, leave the bird for 20 minutes to relax before slicing.
