Crunchy cauliflower bites (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 small head of cauliflower
02 - 1/4 cup breadcrumbs
03 - 1/2 cup grated parmesan
04 - 1 egg

→ Seasonings

05 - 1 clove of garlic, minced
06 - 1/4 cup chopped parsley
07 - Olive oil
08 - Salt and pepper to taste

# Instructions:

01 - Steam the cauliflower until it’s nice and soft. Make sure to drain it really well.
02 - Mash up the cauliflower in a bowl. Then toss in the breadcrumbs, parmesan, egg, parsley, garlic, salt, and pepper. Stir it all up till it’s combined.
03 - Shape the mixture into little patties or croquettes.
04 - Line a baking sheet with parchment paper and place the croquettes on top. Brush them lightly with olive oil. Bake at 200°C (about 400°F) for 20 to 25 minutes until they look golden and crispy.

# Notes:

01 - You can prep these croquettes ahead of time and warm them up in the oven later.
02 - They’re awesome as a side dish or even as a healthy snack.
