Steam the cauliflower until it’s nice and soft. Make sure to drain it really well.

Mash up the cauliflower in a bowl. Then toss in the breadcrumbs, parmesan, egg, parsley, garlic, salt, and pepper. Stir it all up till it’s combined.

Shape the mixture into little patties or croquettes.

Line a baking sheet with parchment paper and place the croquettes on top. Brush them lightly with olive oil. Bake at 200°C (about 400°F) for 20 to 25 minutes until they look golden and crispy.
