Easy Tomato Soup Turkey Balls (Print Version)

# Ingredients:

01 - 1/2 spoon garlic powder.
02 - 1/3 cup bread crumbs.
03 - 1 spoon Italian seasoning.
04 - 1 big carrot, thin slices.
05 - 1 big can (28 oz) crushed tomatoes.
06 - 1 spoon red pepper flakes.
07 - 1/2 spoon olive oil.
08 - 3 garlic cloves, minced small.
09 - 1 yellow onion, diced.
10 - 1 pound lean ground turkey.
11 - Salt and black pepper.
12 - 1 spoon olive oil for frying.
13 - 1 cup orzo pasta.
14 - 4 cups no-salt chicken broth.
15 - 2 spoons pesto (optional).
16 - Parmesan cheese to sprinkle.
17 - Extra pesto for garnish.
18 - Spinach, about 2-3 large handfuls.
19 - 1/2 spoon salt.
20 - 1 can (15 oz) light coconut milk.
21 - 1 spoon Italian spice mix.

# Instructions:

01 - Use your hands to combine turkey, crumbs, seasonings, pesto, salt, and pepper. Shape into 40-45 small balls.
02 - Heat the oil in a pan and cook the meatballs in batches for about 5-6 minutes until browned. Remove and set aside.
03 - Warm oil in a large pot, then sauté onions, garlic, and carrot for 3-5 minutes until softened.
04 - Pour in the tomatoes, coconut milk, broth, pasta, and seasonings. Return meatballs to the pot.
05 - Bring everything to a boil, then reduce heat to low. Let it cook for 15-20 minutes, stirring occasionally.
06 - Stir in spinach and cook just until wilted, about a minute.
07 - Spoon into bowls and top with cheese and pesto. Pair with some bread if you'd like.
