Skillet Cranberry Chicken (Print Version)

# Ingredients:

01 - 1/2 teaspoon of black pepper.
02 - 1/2 teaspoon of salt.
03 - 1 tablespoon of olive oil.
04 - 5-6 chicken thighs, skin-on with bones.
05 - One tablespoon of grated orange peel.
06 - 2/3 cup fresh orange juice.
07 - One diced large shallot, about 1/3 cup.
08 - Two minced garlic cloves.
09 - One cup of chicken broth.
10 - 1 1/2 tablespoons of honey.
11 - 1 tablespoon of apple cider vinegar.
12 - 1 cup of fresh cranberries, plus a couple of tablespoons extra for topping.
13 - Half a thinly sliced orange.

# Instructions:

01 - Get your oven warmed up to 400°F. Sprinkle the chicken with pepper and salt to taste.
02 - Heat oil in a skillet and brown the chicken, cooking for about 4-5 minutes each side. Once it’s golden, transfer it to a plate.
03 - Cook garlic and shallot in the skillet for 4-5 minutes. Pour in the broth, orange juice, honey, and vinegar. Toss in the cranberries and let it bubble for 8-10 minutes until it thickens up a bit.
04 - Place the chicken back in the skillet. Add the extra cranberries and orange slices on top. Bake for 15-20 minutes until the chicken is fully cooked at 165°F.

01 - Skillet should be safe to use directly in the oven.
02 - Fresh cranberries give the best flavor.
03 - Maple syrup can replace honey if you'd like.
