Garlicky Mushrooms Spinach (Print Version)

# Ingredients:

01 - 1 pound of mushrooms (button, cremini, or mixed), sliced
02 - 4 cups of fresh spinach, packed tightly
03 - 4 minced garlic cloves
04 - 2 tablespoons of olive oil
05 - 1 tablespoon of freshly squeezed lemon juice
06 - Season with salt and pepper as needed

# Instructions:

01 - Rinse your mushrooms, dry them off with paper towels, and slice them evenly so they cook at the same pace. Wash your spinach and set it aside. Chop the garlic, and juice your lemon so it's ready to go.
02 - Place a large skillet on medium heat and pour in the olive oil. Let it heat up to create the perfect base.
03 - Toss the sliced mushrooms into the hot pan with the oil. Let them cook and turn a rich golden brown while softening, which takes about 5–7 minutes. Stir them now and then.
04 - When the mushrooms are almost done, throw in the garlic. Mix it around constantly for 1–2 minutes so it doesn't burn, giving off a delicious aroma.
05 - Toss the fresh spinach into the pan and mix it gently with everything else. Sprinkle with your salt and pepper, then finish with that fresh lemon juice. Give it all one last stir.

# Notes:

01 - All types of mushrooms work, but cremini gives a deep, rich taste.
02 - Spinach shrinks down quite a bit as it cooks.
03 - Fresh garlic is best for full flavor; skip the pre-minced stuff!
