Mississippi Sin Quiche (Print Version)

# Ingredients:

→ Base

01 - 4-5 large eggs, whisked gently
02 - 2 corn tortillas, chopped into pieces or sliced into strips
03 - 3 tablespoons of cooking oil

→ Fresh Vegetables

04 - 1 ripe medium tomato, chopped
05 - 1 diced jalapeño, finely chopped
06 - 1 small onion (yellow or white), chopped
07 - 1 small red bell pepper, diced

→ Cheese & Seasonings

08 - Sea salt and freshly cracked black pepper to your liking
09 - ½ cup of shredded Monterey Jack or pepperjack cheese

→ Optional Toppings

10 - Slices of freshly cut peppers
11 - A splash of your go-to hot sauce
12 - Ripe avocado slices
13 - Crushed red chili flakes for extra spice

# Instructions:

01 - Heat oil in a big pan, fry tortilla pieces until crunchy and golden (takes about 4 minutes, flip as you go). Place on paper towels, and sprinkle with a pinch of salt while they're hot.
02 - Using the same pan with leftover oil, toss in your diced onion, bell pepper, and jalapeño. Sauté them for roughly 5 minutes until soft and fragrant.
03 - Add diced tomatoes, then pour in the whisked eggs. Stir gently to mix everything. Season lightly with salt and pepper.
04 - Let the eggs cook on medium heat for 2-3 minutes. Stir on and off until they’re creamy and just starting to set.
05 - Turn off the heat and stir in the cheese and crispy tortilla strips. Add some avocado slices, peppers, hot sauce, or chili flakes before serving if you’d like.

# Notes:

01 - Skip frying tortillas by using pre-made tortilla chips for an easy swap.
02 - Add some cooked chorizo or another meat for a filling dish.
03 - Try adding a scoop of your favorite salsa for more flavor.
