Miso Chicken Katsu Ramen (Print Version)

# Ingredients:

→ Ramen Base

01 - 6 cloves garlic, minced or grated
02 - 2 medium shallots, chopped finely
03 - ¾ teaspoon red chili flakes
04 - 1 inch fresh ginger, thin slices
05 - 2 strips thick-cut bacon, diced

→ Broth & Seasonings

06 - 8 cups chicken stock (low salt)
07 - ¼ cup white miso paste
08 - 3 tablespoons chili sauce (Gochujang preferred)
09 - 1 tablespoon sesame oil, toasted
10 - ¾ cup coconut milk or your favorite milk
11 - ¼ cup light soy sauce

→ Noodles & Vegetables

12 - 4 cups fresh baby spinach, roughly chopped
13 - 4 portions ramen noodles

→ Chicken Katsu

14 - 2 boneless chicken breasts, halved horizontally (or 4 cutlets)
15 - 3 tablespoons sesame seeds
16 - Kosher salt for seasoning
17 - 1 cup Panko breadcrumbs

→ Toppings

18 - Green onions, sliced
19 - Chili oil drizzle
20 - Soft-boiled or hard-boiled eggs
21 - Sheets of nori, toasted
22 - Toasted sesame seeds

# Instructions:

01 - Warm up a large pot or Dutch oven on medium-high. Toss in the bacon and fry it crispy (takes about 5 minutes). Then, stir in garlic, shallots, ginger, and chili flakes. Cook for around 3 minutes until it smells sweet and is browned.
02 - Pour the broth, soy sauce, and milk into the pot. Whisk the miso and chili sauce into the mixture so there are no lumps. Lower the heat and let everything simmer quietly for 10 minutes.
03 - In a shallow bowl, mix breadcrumbs with sesame seeds, then lightly salt it. Take the chicken pieces and press them hard into the crumb mixture until fully coated.
04 - Warm oil in your skillet on medium-high. Pan-fry the chicken on each side for 3-4 minutes until crispy and golden. Place on a cutting board, sprinkle with salt, and slice into thin portions.
05 - Drop the noodles, spinach, and sesame oil straight into the hot soup. Let them settle and soften for 5 minutes.
06 - Scoop the noodles into bowls, ladle in the steaming broth, and lay on the sliced chicken. Pile on eggs, chopped onions, sesame seeds, chili oil, and nori strips to your preference. Enjoy it while it's hot!
