Give the leeks a good wash and slice them thin. Dice up the smoked salmon into small pieces.

Cook the leeks in a skillet with the olive oil for about 8-10 minutes until they're soft. Add some seasoning.

Whisk the eggs together, then stir in the cream, chives, and season with salt and pepper. Toss in the cooked leeks and the salmon pieces.
