Leek Salmon Mini Quiches (Print Version)

# Ingredients:

01 - A bit of chives for garnish.
02 - 4 eggs.
03 - 1 tablespoon of olive oil.
04 - 200 ml heavy cream.
05 - 2 leeks, finely sliced.
06 - 100 grams smoked salmon.
07 - Salt and pepper as needed.

# Instructions:

01 - Give the leeks a good wash and slice them thin. Dice up the smoked salmon into small pieces.
02 - Cook the leeks in a skillet with the olive oil for about 8-10 minutes until they're soft. Add some seasoning.
03 - Whisk the eggs together, then stir in the cream, chives, and season with salt and pepper. Toss in the cooked leeks and the salmon pieces.
04 - Pour the mixture into greased muffin tins and bake in a 180°C oven for 20-25 minutes until golden and set.

# Notes:

01 - These crustless mini quiches are just right for breakfast spreads or as finger food.
02 - You can serve them either warm or cold, they're great both ways.
