Sweet Cornbread Bites (Print Version)

01 - 1/3 cup unsalted butter, melted
02 - 1/4 cup granulated sugar
03 - 1/2 teaspoon salt
04 - 1 cup all-purpose flour
05 - 1 tablespoon baking powder
06 - 2 large eggs
07 - 1 cup cornmeal
08 - 1 cup buttermilk
09 - 3 tablespoons honey

→ Honey Butter Glaze

10 - 2 tablespoons honey
11 - 1/4 cup unsalted butter, melted

# Instructions:

01 - Set your oven to 375°F (190°C) to preheat, and lightly grease a mini muffin tray.
02 - In a big bowl, stir together the salt, flour, sugar, baking powder, and cornmeal with a whisk.
03 - Take another bowl and blend the eggs, honey, buttermilk, and melted butter. Pour this mix into the dry ingredients and gently combine until it all comes together.
04 - Scoop the batter into the slots of the mini muffin tray, leaving a little space at the top of each. Cook for 12-15 minutes, or until they turn golden and a toothpick comes out clean from the middle.
05 - Blend the honey and melted butter in a small bowl. Use a brush to coat the warm poppers with the glaze.
06 - Enjoy them warm—they're great as a snack, starter, or side dish.
