Caramelized Mini Cheesecakes (Print Version)

# Ingredients:

01 - 1 cup of crushed graham crackers.
02 - 4 tablespoons of melted butter.
03 - 2 tablespoons of sugar for the crust.
04 - 225 grams of cream cheese.
05 - 1/4 cup of sugar for the filling.
06 - 1 large egg.
07 - 1 teaspoon of vanilla extract.
08 - 1/4 cup of heavy cream.
09 - 1/4 cup of sugar for torching.

# Instructions:

01 - Stir together the crumbs, sugar, and melted butter. Flatten this mixture into muffin tins and bake them in the oven for 5-7 minutes at 163°C.
02 - Blend the cream cheese and sugar, then mix in the egg, vanilla, and heavy cream. Pour the mixture over the pre-baked crusts.
03 - Bake the cheesecakes for 15-18 minutes. Let them cool in the oven for 10 minutes with the heat off and refrigerate for 2 hours afterward.
04 - Sprinkle sugar evenly on top and use a kitchen torch to caramelize it until it turns golden brown.

# Notes:

01 - The center should slightly wobble when taking it out of the oven.
02 - For the best crunch, caramelize just before serving.
