Heat your oven to 375°F. Lightly coat two pans with cooking spray, then place three tortillas on each one.

Bake the tortillas for about 3 to 5 minutes, flip them, and cook another 2 to 5 minutes until they turn golden. Let them cool down.

Using a skillet on medium-high, cook the beef while breaking it into smaller pieces. Afterward, remove the grease.

Mix in the taco seasoning and water. Let it boil, then reduce the heat to medium-low, simmering for 10 minutes. Set aside.

In a bowl, heat the beans in the microwave. Spread a thin layer onto a tortilla once warmed.

On top of the refried beans layer, add one-third of the cooked beef. Cover it with another tortilla.

Spread a few spoonfuls of enchilada sauce over the top layer. Sprinkle some pepper-jack and cheddar cheese. Finish with diced tomatoes, green onions, and black olive slices.

Repeat this process with the rest of the tortillas and ingredients until you have three layered pizzas.

Place the completed pizzas in the oven for 5 minutes. Once the cheese is bubbling and melted, take them out. Let them rest a bit before slicing.
