Maple Mustard Marinade (Print Version)

# Ingredients:

01 - 1 medium chicken breast (around 8 oz).
02 - 1 garlic clove, crushed or finely chopped.
03 - 1 tablespoon of light olive oil.
04 - 1 teaspoon of dried tarragon.
05 - 2 tablespoons pure maple syrup.
06 - ½ tablespoon of white wine vinegar.
07 - ¼ teaspoon of salt.
08 - 1 tablespoon of Dijon mustard.

# Instructions:

01 - Combine all the marinade ingredients in a bowl. Put it aside for now.
02 - Cover the chicken breast with plastic wrap on a cutting board. Use a meat mallet to gently pound it so the thickness evens out.
03 - Pour the marinade into a sealable plastic bag. Add the chicken breast, seal the bag, and give it a good mix to coat it fully.
04 - Pop the bag into the fridge and let the chicken soak in the flavors for 30 minutes.
05 - Take the chicken out of the marinade and bake or grill it, depending on your preference.
06 - Set your oven to 400°F. Cover a baking pan with foil, top with a wire rack, and place the chicken on it. Leave it uncovered and roast until a meat thermometer reads 165°F (takes about 25 minutes for chicken ½ inch thick).
07 - Grill the chicken until it hits an internal temperature of 165°F (about 15 minutes for ½-inch thick chicken breast).
