Peel the mangoes and slice them into even strips. Grate the zest off the lime.

Melt the sugar on low heat till it turns a golden caramel color.

Cut out 5 circles of puff pastry. Pour the caramel into the tart molds, sprinkle lime zest, arrange mango slices, and drizzle with lime juice. Cover with pastry circles, then poke holes using a fork.

Pop them in the oven at 180°C for 25-30 minutes until golden brown. Take them out of the molds quickly.
