Lime Blueberry Cakes (Print Version)

# Ingredients:

01 - 1/4 cup granulated sugar.
02 - 1 1/2 cups ground graham crackers.
03 - 1/2 cup melted unsalted butter.
04 - Zest from 1 lime.
05 - 16 oz softened cream cheese.
06 - 2 large eggs.
07 - 1/2 cup sugar.
08 - 2 tbsp fresh lime juice.
09 - 1 cup fresh or frozen blueberries.
10 - Whipped cream for serving.
11 - Extra blueberries for decorating.

# Instructions:

01 - Set your oven to 325°F. Get a cupcake pan ready with liners.
02 - Stir together the graham crumbs, sugar, and butter. Push this mixture into the cupcake liners.
03 - Beat the cream cheese and sugar until it’s fluffy. Mix in eggs, lime juice, and zest. Add blueberries gently. Fill each liner nearly full.
04 - Pop it into the oven for 20-25 minutes, or till the centers hold firm. Let them cool fully in the pan before taking out.
05 - Let them hang out in the fridge for at least 2 hours.
06 - Pile on whipped cream and scatter with a few extra blueberries.
