Mix the flour, cornstarch, salt, baking powder, and baking soda in a bowl. Set it aside for later.

In a separate bowl, beat the eggs and brown sugar for 5 minutes. This step makes it pale, ribbon-like, and triple in size. Drizzle in the oil slowly while keeping the whisk going.

Take a spatula and slowly fold the dry ingredients into the egg mixture. Alternate mixing with adding the buttermilk. You’ll stop when it’s just barely mixed, with a few lumps. Let it rest for 10 minutes.

Get your waffle maker hot. Pour in about 250 ml of the batter at a time to make two waffles. Close the lid and cook for 5 minutes, or until they’re crisp and golden. Keep them warm once done.

Do the same with the leftover batter. Pair the waffles with a strawberry sauce for dipping and enjoy!
