Leek Bacon Flan (Print Version)

# Ingredients:

01 - 2 eggs.
02 - 300 ml of milk.
03 - 350 g of smoked bacon bits.
04 - 500 g of leek whites.
05 - Pepper from the grinder.
06 - A pinch of salt.
07 - 100 g of grated Gruyère cheese.
08 - 1 onion.

# Instructions:

01 - Slice the leeks into 1 cm circles. Rinse them, then boil for 7-8 minutes. Dunk in ice water after and drain well.
02 - Toss the bacon pieces into a pan and let them fry. Add the onion slices and cook till golden.
03 - Stir in the leeks with the bacon-onion blend to cook off any remaining water.
04 - Whisk the eggs with a sprinkle of pepper and salt. Pour in the milk and then mix it with the leek and bacon combo.
05 - Pour the mix into ramekins or an ovenproof dish, sprinkle Gruyère on top, and bake it for 20-30 minutes at 200°C.

01 - Pair it with some green salad for a balanced meal.
