Slice the leeks into 1 cm circles. Rinse them, then boil for 7-8 minutes. Dunk in ice water after and drain well.

Toss the bacon pieces into a pan and let them fry. Add the onion slices and cook till golden.

Stir in the leeks with the bacon-onion blend to cook off any remaining water.

Whisk the eggs with a sprinkle of pepper and salt. Pour in the milk and then mix it with the leek and bacon combo.

Pour the mix into ramekins or an ovenproof dish, sprinkle Gruyère on top, and bake it for 20-30 minutes at 200°C.
