Turn the oven on to 200°C and roll out the pastry on a surface that’s lightly coated in flour.

Spread softened butter across the pastry and sprinkle almost all of the sugar evenly on top.

Bring each side of the pastry toward the center, folding it to create a sealed rectangular shape.

Roll the whole sheet of pastry into a log shape.

Slice the log into 6 pieces that are roughly the same size.

Put the slices into a silicone muffin tray. Sprinkle the rest of the sugar over them, and brush with egg yolk for color if you want.

Pop them in the oven for 30 minutes. Let them cool a little before enjoying.
