Indian Lentil Curry (Print Version)

# Ingredients:

01 - 175g red lentils.
02 - 2 carrots.
03 - 2 onions.
04 - 2 garlic cloves.
05 - 1 lime.
06 - 400ml coconut milk.
07 - 400g tomato pulp.
08 - 2 tablespoons curry powder.
09 - 2 tablespoons turmeric powder.
10 - Fresh coriander.
11 - Salt.
12 - Pepper.
13 - Olive oil.

# Instructions:

01 - Soak the red lentils in cold water and set them aside.
02 - Peel the carrots, onions, and garlic, then chop them finely.
03 - Cook the veggies over medium heat in a little olive oil for a few minutes.
04 - Toss in the turmeric and curry powder. Add salt and pepper to your taste.
05 - Pour in the coconut milk and tomato pulp. Drain the lentils and add them too. Simmer for about 40 minutes, adding water if needed.
06 - Right before serving, squeeze some lime juice and sprinkle fresh coriander on top.
