Soak the red lentils in cold water and set them aside.

Peel the carrots, onions, and garlic, then chop them finely.

Cook the veggies over medium heat in a little olive oil for a few minutes.

Toss in the turmeric and curry powder. Add salt and pepper to your taste.

Pour in the coconut milk and tomato pulp. Drain the lentils and add them too. Simmer for about 40 minutes, adding water if needed.

Right before serving, squeeze some lime juice and sprinkle fresh coriander on top.
