03 - 1/2 cup grated aged cheddar.
04 - 1 tablespoon fresh thyme.
05 - 1/2 cup crunchy panko crumbs.
06 - 2 eggs, kept separate.
07 - 2 tablespoons Dijon mustard.
08 - 2 tablespoons bagel-style seasoning mix.
09 - Hot honey for drizzling, optional.

# Instructions:

01 - Set the oven to 400°F to preheat. Cover a baking tray with parchment paper.
02 - In a bowl, mix together the sausage, breadcrumbs, cheddar, thyme, and one egg.
03 - Using a small bowl, beat the second egg with a splash of water.
04 - Flatten the puff pastry and slice each sheet into two long rectangles.
05 - Spread the sausage mixture down the center of each strip. Brush one edge with mustard and the other with egg wash.
06 - Wrap the pastry tightly around the sausage mix and seal it, placing the seam underneath.
07 - Make light cuts on the tops for decoration and slice into rolls about 1.5 inches wide.
08 - Coat the tops with egg wash and sprinkle the bagel seasoning. Bake for about 18-20 minutes till they turn golden.

# Notes:

01 - Freeze unbaked rolls for later use.
02 - Skip cheese for a dairy-free version.
03 - Tastes great with a drizzle of hot honey while warm.
