Honey Garlic Carrots (Print Version)

# Ingredients:

01 - 2 tablespoons of olive oil.
02 - 3 minced garlic cloves.
03 - 800 g of carrots, peeled and sliced into sticks.
04 - 3 tablespoons of honey.
05 - Salt and pepper, to taste.
06 - Chopped fresh parsley for topping (optional).
07 - 1 teaspoon of fresh or dried thyme.

# Instructions:

01 - Set your oven to 200°C (390°F) and prepare a baking tray by lining it with parchment paper or foil.
02 - Take a big bowl and toss the carrots with olive oil, honey, thyme, garlic, salt, and pepper. Make sure they're well coated.
03 - Spread the carrots on the baking tray in an even single layer for proper roasting.
04 - Put the tray in the oven and cook the carrots for about 25 to 30 minutes. Stir them halfway through to keep them evenly cooked and caramelized at the edges.
05 - Move the carrots to a serving dish. Sprinkle some fresh parsley for a nice pop of color, then serve them hot.

# Notes:

01 - Try adding a dash of paprika or cayenne for a spicy touch.
02 - Swap out the honey with maple syrup to make it vegan-friendly.
03 - For extra crunch, sprinkle toasted almonds or walnuts before serving.
