# Ingredients:

01 - Two medium or big russet potatoes.
02 - A couple of tablespoons of olive oil.
03 - Salt and pepper, or use seasoning salt instead.
04 - One tablespoon of salted butter (14g).
05 - A tablespoon of plain flour (8g).
06 - Three-fourths of a cup of milk, any kind works.
07 - Shredded sharp cheddar, three-fourths of a cup (3oz).
08 - A tiny pinch of cayenne pepper.
09 - Pepper and salt, adjust to your taste.

# Instructions:

01 - Set oven to 475°F. Cut your peeled potatoes into 8 slices each. Coat them in oil. Lay them on a greased tray. Sprinkle salt on top.
02 - Bake for 15 mins, then flip and season the other side. Continue baking for another 10-20 minutes till they're crunchy. Keep an eye on them near the end.
03 - Melt the butter, then add flour and stir for 30-60 seconds. Slowly pour in milk while whisking nonstop. Cook till it thickens (about 3-4 minutes). Once off the heat, mix in cheese bit by bit. Sprinkle some cayenne, salt, and pepper.
04 - Top the fries with the cheese sauce and enjoy!

# Notes:

01 - Freshly shred your cheese—it melts better.
02 - Spread fries out so they don’t touch.
03 - Pour the milk little by little to avoid lumps.
04 - Eat this dish as soon as it’s ready.
05 - Any kind of cheese can be used if sharp cheddar isn’t your thing.
06 - Perfect treat for cozy days.
