Chop up the walnuts, almonds, and pistachios into pieces. Keep some chunks for an added crunch.

Trim your filo sheets so they fit the baking dish. Use melted butter to brush each sheet. Layer 10 buttered sheets, a layer of nuts, 5 more buttered sheets, another layer of nuts, 5 additional buttered sheets, another nut layer, and finish off with 10 top buttered sheets.

Slice the baklava into diamond or square shapes. Pop it into the oven at 200°C for 20 minutes or until golden brown.

Simmer the sugar, honey, and water with your chosen flavor for 15-20 minutes to thicken. Let it cool down completely.

Pour the cooled syrup over the hot baklava. Make sure it's soaked evenly everywhere.

Sprinkle some chopped pistachios or almonds on top.
