I'm excited to tell you about my mom's amazing Vegetable Beef Soup. It's pure comfort food that brings back warm memories. The beef turns out so soft, there's every veggie you could want, and the tomato broth is light but packs so much flavor. I like making a big pot so I can stash some away in the freezer for surprise cravings.

Irresistible Reason To Dig In

This is the real deal when it comes to comfort food. Toss it together without much fuss. Leftover beef works great and frozen veggies make life easier. Letting it sit overnight? Magic happens and the flavor gets even better.

Simple Steps to a Delicious Bowl

Wrap It Up
Give your soup a taste, add a pinch of whatever it needs, and dig in with a crusty piece of bread.
Toss It All In
Mix up your beef, potatoes, veggies, broth, water, and tomato soup into the pot.
Kick Things Off With Beef
Go with freshly cooked or leftover beef—just chop it into bite-sized pieces.
Simmer Down
Let everything bubble away for about 40 minutes, or leave it in the slow cooker to hang out all day.

Easy Tricks For Awesome Bowls

Frozen veggies are a total game-changer. Want your soup extra thick? Pour in another can of tomato soup. Craving bigger flavor? Toss in a splash of Worcestershire or a bay leaf. Warm biscuits on the side? Yes, please.

Stash and Reheat Later

Wait for everything to cool before sticking it in the freezer. I love breaking it down into single servings for quick lunches. When hunger hits, thaw in the fridge through the night then heat up on the stove. Homemade goodness in no time.

Seriously Cozy Classic

This dish is more than food—it's a little piece of family history. Every pot brings back memories of hanging out at the kitchen table. Fresh or reheated, it never fails to hit the spot every single time.

Frequently Asked Questions

→ Can I swap frozen veggies with fresh ones?

Absolutely! Just be sure to time them right so they don't turn mushy.

→ What's the reason for pre-cooking the beef?

Prepping the beef first keeps it moist and creates a deeper flavor before mixing it with the other ingredients.

→ Will this soup freeze well?

Definitely! Store it in containers after it cools, and you're good for up to three months.

→ Why choose tomato soup over fresh tomatoes?

Tomato soup makes the broth creamier and gives a nice touch of sweetness that complements the savory beef.

→ Is it possible to make this in one pot?

You sure can, but slow-cooking the beef separately gets the best tenderness. Give it a try!
