Valentine Donuts Special (Print Version)

# Ingredients:

→ Donut Dough

01 - All-purpose flour - 460 g
02 - Whole milk - 300 ml
03 - Instant yeast - 5 g
04 - Sugar - 70 g
05 - Salt - 1 tsp
06 - Large egg - 1
07 - Butter - 90 g
08 - Oil for frying - as needed

→ Pastry Cream

09 - Whole milk - 400 ml
10 - Vanilla extract - 2 tsp
11 - Vanilla bean - 1 pod
12 - Pinch of salt
13 - Cornstarch - 30 g
14 - Sugar - 100 g
15 - Egg yolks - 4
16 - Butter - 30 g

→ Caramel

17 - Sugar - 200 g
18 - Water - 60 ml

# Instructions:

01 - Mix the cornstarch, sugar, and salt together. Whisk the egg yolks until smooth. Heat the milk with the vanilla to infuse it. Carefully combine the milk with the egg mixture, tempering slowly. Keep cooking until it thickens. Chill in the fridge after cooling.
02 - Stir the milk, yeast, and sugar together. Add the flour and butter. Knead for 2–3 minutes. Leave it to rise for 1.5–2 hours. Roll the dough out and cut it into heart shapes. Rest them for 30 minutes.
03 - Heat the oil to 160–180°C. Fry the donuts until they're golden. Drain excess oil with paper towels.
04 - Make a little cut in each donut. Fill them up with pastry cream generously.
05 - Cook a caramel until golden. Quickly dip the donuts in the caramel. Let them cool before serving.
