Ham Cheese Pastry Bites (Print Version)

# Ingredients:

→ Pastry Base

01 - 2 puff pastry sheets, thawed (or your own rough puff pastry)

→ Filling

02 - 8 oz sharp cheddar cheese, freshly grated (like Dubliner)
03 - 8-10 oz thinly sliced or chipped Virginia ham
04 - 1/4 cup Dijon mustard

→ Finishing Touches

05 - 1 large egg (used as an egg wash)
06 - A handful of fresh thyme leaves

# Instructions:

01 - Take your puff pastry and roll it out gently to thin it down to about 1/8-inch thickness. Cut each into 4 even-sized squares.
02 - Smear 1 teaspoon of mustard on one side of each square, then add 1 tablespoon of cheese, a bit of ham, and finish with another tablespoon of cheese. Leave some space at the edges to seal it cleanly.
03 - Wet the empty edge of each square with a little water, fold the pastry over to shape triangles, and press the edges together securely. Pinch them with a fork to lock them tight.
04 - Arrange the turnovers on baking trays lined with parchment paper. Let them cool in the fridge for 15-30 minutes. Preheat your oven to 400°F during this time.
05 - Brush the tops with the egg wash, slice a few small slits to let steam escape, and sprinkle thyme leaves over the top.
06 - Cook in the oven for 15-20 minutes, or until they've turned golden and crisp on the outside. They're best enjoyed warm!

# Notes:

01 - Pair these with hot pepper jelly for a spicy twist
02 - You can prepare these ahead and freeze them for up to 2 months
03 - These taste best fresh out of the oven while crisp and warm
