Take your puff pastry and roll it out gently to thin it down to about 1/8-inch thickness. Cut each into 4 even-sized squares.

Smear 1 teaspoon of mustard on one side of each square, then add 1 tablespoon of cheese, a bit of ham, and finish with another tablespoon of cheese. Leave some space at the edges to seal it cleanly.

Wet the empty edge of each square with a little water, fold the pastry over to shape triangles, and press the edges together securely. Pinch them with a fork to lock them tight.

Arrange the turnovers on baking trays lined with parchment paper. Let them cool in the fridge for 15-30 minutes. Preheat your oven to 400°F during this time.

Brush the tops with the egg wash, slice a few small slits to let steam escape, and sprinkle thyme leaves over the top.

Cook in the oven for 15-20 minutes, or until they've turned golden and crisp on the outside. They're best enjoyed warm!
