Crack the eggs into a bowl and whisk them until blended. Sprinkle in some salt and pepper.

Warm a 23 cm non-stick skillet over medium heat, melting the butter. Pour in the egg mix and let it cook for 2 to 3 minutes while gently pulling at the edges with a spatula to let the uncooked eggs spread.

Once the sides of the omelette look mostly set but the center's still a little soft, spread the ham, cheddar, and chives over one side of it.

Flip the other side over your fillings to close it up. Let it cook another 2 minutes or until it’s as set as you like. Slide it onto a plate and enjoy with some toast.
