Hearty Ham Soup (Print Version)

# Ingredients:

01 - 2 1/2 cups ham, diced
02 - 1 tablespoon cooking olive oil
03 - 2 tablespoons unsalted butter
04 - 1/2 cup white wine, dry
05 - 1 yellow onion, chopped finely
06 - 3 garlic cloves, minced
07 - 1 teaspoon Worcestershire
08 - 1 teaspoon spicy sauce
09 - 3/4 cup small carrot pieces
10 - 2 celery stalks, chopped up
11 - 32 ounces of drained pinto beans
12 - 6 cups chicken broth, low-salt
13 - 1/4 cup heavy cream (if you like)
14 - 2 cups fresh spinach
15 - 1 teaspoon each: dried parsley, mustard powder, oregano, basil
16 - 1/4 teaspoon of sage and black pepper

# Instructions:

01 - Heat up oil and cook ham till lightly browned, about 1-2 minutes per side. Cut it up after removing.
02 - Pour in wine, scraping up bits from the pan. Wait until half of it cooks away, roughly 4 minutes.
03 - Let butter melt in the pot. Toss in garlic followed by onions, celery, and carrots. Stir in herbs and spices. Let this mix cook for 5-6 minutes.
04 - Mix in the beans, broth, your diced ham, and cream (if adding). Cover partway and let it simmer for 30 minutes.
05 - Stir in spinach; let it soften for 3 minutes. Taste and adjust flavor. Sprinkle with parmesan before serving.
