Dirty Rice Ground Beef (Print Version)

# Ingredients:

01 - 1.5 cups uncooked long-grain white rice
02 - 3 cups chicken stock
03 - 1 small onion, diced into small pieces
04 - 1 pound ground beef
05 - 1 green or red bell pepper, chopped
06 - 2 stalks of celery, cut into small bits
07 - 1 teaspoon Cajun spices (adjust as needed)
08 - 1 teaspoon dried thyme
09 - 1 teaspoon smoked paprika
10 - 0.5 teaspoon black pepper, ground
11 - Green onions, sliced, for topping (optional)
12 - 2 garlic cloves, finely minced
13 - 1 tablespoon olive oil

# Instructions:

01 - Warm a tablespoon of oil in a big skillet or Dutch oven over medium heat. Toss in the ground beef and cook it up, breaking it apart into pieces, until no pink remains. This will take around 5–7 minutes. Drain any grease if necessary.
02 - Add the chopped onion, bell pepper, and celery to the cooked beef in the skillet. Stir frequently and let it all cook for about 3–5 minutes until they start to soften. Mix in the garlic and keep stirring for another minute till it smells amazing.
03 - Pour in the uncooked rice and stir it around so it gets coated by the beef and veggies. Let it toast on low heat for about a minute or so.
04 - Sprinkle in the paprika, thyme, Cajun seasoning, and black pepper to season everything. Then, pour in the chicken stock. Turn up the heat to medium-high until it starts bubbling. Make sure to stir so the rice doesn't stick.
05 - Turn the heat to low and cover the skillet. Let the mixture simmer gently for about 18–20 minutes, until the rice absorbs all the liquid and softens. Resist the urge to peek! Then, take it off the heat and let it sit for 5 minutes.
06 - Take off the lid and fluff the cooked rice gently with a fork. Sprinkle on some green onions if you're using them. Serve immediately while it's warm.
